In your case these filters are probably exluding the program change messages to be recorded. Don't know Acid Pro myself but usually there are midi filters that can be set.

That means that you either are not sending or not recording them. In your case, these messages apparently don't end up with the wavetable synth. piano to violin is represented in Midi through a so-called program change message.
